Fresh Strawberry and Feta Salad with Creamy Vinaigrette

Ingredients
  

For the Salad:

  • Fresh salad greens e.g., mixed greens, spinach, or arugula
  • Fresh strawberries hulled and sliced
  • A handful of blueberries optional
  • ½ block of feta cheese crumbled
  • A handful of pecans roughly chopped

For the Strawberry Vinaigrette:

  • 5 –6 whole strawberries
  • ¼ cup feta cheese
  • ¼ cup pecans
  • ¼ cup olive oil
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons sugar
  • ½ teaspoon dried basil
  • ¼ teaspoon salt

Instructions
 

Preparing the Salad:

  • Wash and dry the salad greens. Tear into bite-sized pieces if necessary.
  • Place the greens in a large serving bowl.
  • Wash the strawberries, remove the stems, and slice them.
  • Add the sliced strawberries and blueberries (if using) to the greens.
  • Sprinkle the crumbled feta cheese over the salad.
  • Top with the chopped pecans.

Preparing the Vinaigrette:

  • In a blender, combine the strawberries, feta cheese, pecans, sugar, dried basil, and apple cider vinegar.
  • Blend until smooth.
  • While blending, slowly drizzle in the olive oil to emulsify the dressing.
  • Taste and add salt as needed. Blend briefly to combine.

Assembling the Salad:

  • Drizzle the desired amount of strawberry vinaigrette over the salad.
  • Toss gently to combine and serve immediately.
