Chicken
- 1 kg chicken wings with skin
For the Marinade
- 2 garlic cloves minced
- 1 tbsp grated ginger
- 2 tsp chili powder
- ¾ tsp ground cumin
- 1½ tsp salt
- 2 tbsp vinegar white or apple cider
- 1½ tbsp honey
- 1 tbsp vegetable oil
- ½ cup barbecue sauce
- Extra oil for brushing grill
The Marinade
In a large bowl, combine garlic, ginger, chili powder, cumin, salt, vinegar, honey, oil, and BBQ sauce.
Stir well.
Add wings to the bowl and toss thoroughly with your hands.
Cover and refrigerate for at least 20 minutes (longer, up to 24 hours, boosts flavor).
Remove from fridge 30 minutes before cooking.
Prep the Grill
Lightly oil grill grates to prevent sticking.
Preheat to around 218 °C (425 °F).
Place wings on the grill.
Cook 15–20 minutes, turning every 5 minutes, until the internal temperature hits 73 °C (165 °F) and the skin is golden and crispy.
For extra char, leave them a little longer once they reach safe temp.
Remove wings and let them rest a few minutes before serving—this helps them stay juicy.
